Friday:
Lunch – Pan roasted salmon with Salsa Jesusita and warm corn salad
Dinner – Bistec Tampiqueña – A certified Angus N.Y. Strip grilled and topped with a traditional Tampico sauce and grated manchego cheese. Served with refried Black beans and firecracker salsa tostadas.
Saturday:
Lunch – Grilled hangar steak over chipotle salsa with chimichurri and butternut squash empinadas
Dinner – Green Chile Grits with Carnitas
