Tonight’s special features fresh masa dough cooked on the griddle and topped with refried black beans, barbacoa and roasted butternut squash.
Huaraches translated as Sandals so the dough is very thin.
Barbacoa ,in this case, is beef bottom round cooked for 5-6 hours at 25o degrees with green chiles, chipotle peppers, beef stock, onions, garlic, and seasonings. The beef is shredded with the pan sauce and mounded atop the masa dough.
